Did everyone enjoy Taco Tuesday yesterday? How many of you actually participate in Taco Tuesday? I feel like we are moving down the week with days that will soon dictate what we eat every day! Meatless Monday, Taco Tuesday…are Waffle Wednesday, Chicken Thigh Thursday and Fried Food Friday coming next? I’ll be on the lookout for these!
Any of my friends will tell you that I don’t like Mexican food. This is actually only partly the case. The truth is, I don’t like “Americanized” Mexican food – big burritos, giant bowls of rice and beans and cheese, enchiladas dripping with cheese and oil. I always come out of these meals feeling fat and uncomfortable. However, I do enjoy simple, fresh, lighter Mexican Fare – fish tacos, guacamole with chips or veggies to dip, build your own fajitas. And of course, you can’t forget the obligatory margarita (jalapeño for me please)! So this week, I decided to jump of the bandwagon and support Taco Tuesday…sort of.
There is a restaurant near me called Truck Restaurant. Not only do they make the BEST jalapeño margarita, they also have some of the most delicious and inventive Mexican food I have seen. One of my favorites is the Salmon Burrito. So for Taco Tuesday this week, I decided to jump on the Taco Tuesday bandwagon and make Salmon Burritos…that’s close enough right? It’s the thought that counts!
Truck’s Salmon Burrito dish is simple – a base of refried beans, a wrap spread with goat cheese and filled with flaked salmon, then topped with a cucumber salsa. I didn’t ask them for their ingredient list, I just went about creating my own. I started with the cucumber salsa.
Key words in this dish – simple and fresh. I diced up cucumber, jalapeño, red onion, cilantro and tomatoes, then squirted in some lime, sprinkled on salt and pepper and mixed it all together. I put that to the side and let the flavors meld together while I put the burrito together.
Start with your burrito wrap. You can use any kind you like. Last night I used a whole wheat wrap made by Flatout rather than a traditional burrito. Whatever you have in your pantry or whatever you like works! That’s one of the best parts of cooking – use what you enjoy; any recipe can be tweaked to your liking. It is the same reason that I hate baking. For some reason when I follow a baking recipe to a T it never turns out. They say those who cook can’t bake and vice versa? Well for me it is definitely true.
Once you have the wrap set out, spread the bottom half with a thin layer of goat cheese. Then take your cooked salmon and flake it apart with two forks. Place the salmon in a thin layer over the goat cheese and roll up the wrap like a….burrito! Place the burritos in a baking dish, cover with foil and bake. At the end of the baking time, I like to turn the oven onto broil and remove the foil to allow the burrito to crisp up, giving it some crunch and texture.
For refried beans on the bottom of the plate, I bought canned refried beans, and doctored them up with salt, pepper, and chili powder. I put a circle of beans on the plate, then the burrito and topped it all with the cucumber salsa. This dish didn’t just make for a pretty picture, it’s also a filling version of a Mexican dish with no guilt on the side. Happy Taco Tuesday!
Salmon Burrito
This is my version of a salmon burrito served at Truck Restaurant, one of my favorite local Mexican restaurants.
Ingredients
- 6 oz cooked salmon
- 2 oz goat cheese
- 2 burrito wraps
Cucumber Salsa
- 1 cup diced cucumber
- 1/4 cup diced red onion
- 1 tbsp diced jalapeños
- 1 tbsp chopped cilantro
- 1/2 cup diced tomatoes
- 1/2 lime juiced
- salt and pepper
Instructions
Cucumber Salsa

Dice your cucumbers, red onion, jalapeños and tomatoes to an even small dice. Then chop up your cilantro and add it all to a large bowl.

Squeeze in half of a lime and add salt and pepper to your taste. Mix together and put aside.
Salmon Burrito
-
Preheat oven to 375.
-
Spread a thin layer of goat cheese on half of each of the wraps.
-
Place your cooked salmon in a bowl, and flake it apart with two forks. Once broken up, cover the goat cheese on each wrap with a layer of salmon.

Roll up the wraps into burritos.
-
Place the burritos into a baking dish and cover with aluminum foil.
-
Place in the oven and bake, covered, for 20 minutes.
-
After 20 minutes, turn the oven onto broil. Remove the foil and allow to cook for 3 more minutes, checking periodically so they don’t burn.

Remove from oven. If any oil from the salmon has accumulated on the bottom, you can place the burritos on paper towels to rest while you begin to plate.

Place the beans in the center of the plate. Put the burrito on top and then top with the cucumber salsa. Serve with an additional lime wedge.
