Asian Turkey Lettuce Wraps

It looks like the weather is finally going to take a turn and start cooperating! The kids and I have been loving being outside all day, riding bikes, playing on the playground, jumping in the bouncy castle, and more. Just having the freedom to run around and be loud and silly (the hubby and me too, not just the kids) has really helped us all find some sanity.

It has also changed my cooking mindset, and has me looking forward to finally incorporating spring vegetables, light healthy salads, and grilled meat and fish – anything that pairs well with a crisp rosé or sauv blanc.

Tonight I didn’t go full throttle into spring vegetables, as my last Instacart order didn’t account for the weather and I have some quarantine items to use up. However, I am going lighter with a delicious lettuce wrap. Lettuce wraps are one of my favorite inventions. Whether it’s turkey, cheese, avocado and honey mustard wrapped in a big piece of iceberg, or it’s ground turkey mixed with vegetables in a flavorful asian sauce wrapped inside a bibb lettuce leaf, I’m a happy eater. Tonight we went for the latter, utilizing some mushrooms I had left over, a pepper, some carrots, and a can of water chestnuts I found in the pantry. Side note: does anyone else have to check the expiration dates of every pantry item before they use it, since they know full well that they almost never do a full pantry clean out? Guilty. Whats the oldest item you have found?? No comment from me, it’s embarrassing. Rest assured, the water chestnuts made the cut and are a perfect crunchy addition to this dish.

I like to start with 93% lean turkey. You can use the 99% to eliminate basically all the fat, but then the flavor goes with it and the dish dries out. This is a healthy enough dish that the extra 6% will make a difference in flavor, not your waist line…trust me.

Heat the olive oil in a large sauté pan over high heat, adding in the turkey once the oil is hot. Allow the turkey to cook until is it cooked through and you see no more pink, breaking up the meat as it cooks.

While the turkey is cooking, prep your veggies and you sauce. Start by dicing the carrot, pepper, mushrooms, garlic, and water chestnuts into small pieces. Remember, this mixture is going into a lettuce leaf and then eaten by hand, so you want it all minced up small so it mixes together well and you can get all the flavors in every bite. Also, peel and grate the ginger and add it to the pile of veggies.

When the turkey has cooked through, drain off any fat in the bottom of the pan, return the pan to the heat and push the turkey off to one side. Add the vegetables into pan and sauté for 2 minutes until the vegetables begin to soften.

Then mix the turkey and vegetables together, add in the green onions and stir in the sauce. Allow to cook for 1-2 minutes until it has all heated through.

Separate the head of lettuce into individual leaves. Take one leaf, add a heaping helping of the turkey mixture. I like to add a little extra sriracha and some of my homemade pickled red onions on top for a little added bite. I swear I can devour half a dozen of these…but I’ll try to control myself.

Asian Turkey Lettuce Wraps

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lean turkey
  • 1 large carrot
  • 1 small onion
  • 1/2 cup diced mushrooms
  • 8 oz water chestnuts
  • 1/4 cup hoisin sauce
  • 2 tbsp low sodium soy sauce
  • 3 cloves garlic
  • 1 inch ginger peeled and grated
  • 2 tsp sriracha more or less depending on your taste
  • 1 tsp sesame oil
  • 1/4 cup green onions sliced
  • bibb lettuce

Instructions

  1. Heat olive oil in a large saute pan over high heat. Once hot, add in the turkey and cook until no longer pink, breaking it up while it cooks.

  2. While the turkey is cooking, dice up all the vegetables.

  3. In a bowl, whisk together hoisin sauce, soy sauce, garlic, ginger, sriracha and sesame oil.

  4. Once the turkey is cooked, drain any excess fat and push the turkey to the side of the pan. Add in the vegetables and cook for 2-3 minutes until softened.

  5. Pour in the sauce mixture and combine all together, cooking for 2 minutes until heated through.

  6. Off the heat, add in the green onions and mix in.

  7. Spoon a large helping of the turkey mixture into a lettuce leaf, add any toppings you wish, wrap and enjoy!
