Salmon Burrito

This is my version of a salmon burrito served at Truck Restaurant, one of my favorite local Mexican restaurants.

Ingredients

  • 6 oz cooked salmon
  • 2 oz goat cheese
  • 2 burrito wraps

Cucumber Salsa

  • 1 cup diced cucumber
  • 1/4 cup diced red onion
  • 1 tbsp diced jalapeƱos
  • 1 tbsp chopped cilantro
  • 1/2 cup diced tomatoes
  • 1/2 lime juiced
  • salt and pepper

Instructions

Cucumber Salsa

  1. Dice your cucumbers, red onion, jalapeƱos and tomatoes to an even small dice. Then chop up your cilantro and add it all to a large bowl.

  2. Squeeze in half of a lime and add salt and pepper to your taste.  Mix together and put aside.

Salmon Burrito

  1. Preheat oven to 375.

  2. Spread a thin layer of goat cheese on half of each of the wraps.

  3. Place your cooked salmon in a bowl, and flake it apart with two forks.  Once broken up, cover the goat cheese on each wrap with a layer of salmon.

  4. Roll up the wraps into burritos.

  5. Place the burritos into a baking dish and cover with aluminum foil.

  6. Place in the oven and bake, covered, for 20 minutes.

  7. After 20 minutes, turn the oven onto broil.  Remove the foil and allow to cook for 3 more minutes, checking periodically so they don't burn.

  8. Remove from oven.  If any oil from the salmon has accumulated on the bottom, you can place the burritos on paper towels to rest while you begin to plate.

  9. Place the beans in the center of the plate. Put the burrito on top and then top with the cucumber salsa.  Serve with an additional lime wedge.
