Vegetable Frittata

Ingredients

  • 1 tsp olive oil
  • 2 cups diced fresh vegetables
  • 1 clove garlic
  • salt and pepper
  • 1 dozen eggs
  • 1/2 cup milk
  • 1/2 cup gruyere cheese shredded

Instructions

  1. Preheat oven to 350.

  2. Dice up any vegetables you have/enjoy - squash, broccoli, peppers, mushrooms, etc.

  3. Heat olive oil in a 10-12 inch pan over medium high heat. Add in the vegetables, garlic, salt and pepper and saute for 5 minutes until veggies begin to brown and tenderize.

  4. While the vegetables are cooking, crack the eggs in a bowl, add the milk, salt and pepper and whisk until fully combined.

  5. Once the vegetables are cooking, spread them in an even layer in the pan. Lower the heat to medium and pour in the eggs. Allow the mixture to cook for 2 minutes until the bottom and sides begin to set. Transfer the pan to the oven and cook for 20-30 minutes until set.

  6. Spread the cheese on the frittata and cook for another 2-3 minutes until melted. Serve over a salad with the garlic scape pesto on the side, if desired.
