Heat olive oil in a large saute pan over high heat. Once hot, add in the turkey and cook until no longer pink, breaking it up while it cooks.
While the turkey is cooking, dice up all the vegetables.
In a bowl, whisk together hoisin sauce, soy sauce, garlic, ginger, sriracha and sesame oil.
Once the turkey is cooked, drain any excess fat and push the turkey to the side of the pan. Add in the vegetables and cook for 2-3 minutes until softened.
Pour in the sauce mixture and combine all together, cooking for 2 minutes until heated through.
Off the heat, add in the green onions and mix in.
Spoon a large helping of the turkey mixture into a lettuce leaf, add any toppings you wish, wrap and enjoy!
